Bacon and vegetable soup
Ingredients
1 bacon hock 1 ½ cups soup mix 2 carrots grated 1 small parsnip grated 2 celery sticks sliced finely ½ swede grated 1 onion lightly sautéed. Serves 8-10 |
Place bacon hock in large pan and cover with water. Bring water to the boil and discard. Cover hock in fresh water and bring back to the boil. Add soup mix and leave to simmer for 1 ½ hours then add vegetables. And cook for at least a further 3 hours. Remove hock and when cool enough to handle trim off bacon and return to soup discarding bones and skin. Season to taste. |
